    Hi Auntie Annie can u give me ham hock and mongo beans recipe?

    • Hi Jackie! I don’t have one posted. It here’s what you do. Soak the mongo beans in water for at least one hour before you start to cook the ham hocks. Place your ham hocks and soaked mongo beans in a large pot (cut the ham hocks in half if they are large). Cover the ham hocks with water and add a teaspoon of salt, and chopped garlic and onions. Cover and cook over medium high heat for about one hour or until the ham hocks are tender and the beans are done. Add and can of coconut milk at the end (optional). Taste and add more salt and pepper if needed.

    Ahhh the memories this brings back to me of my birth place, 15 years of my life if I remembered clearly on all the Fiesta’s the Elder would all gather at the house/location to start the preparation, as far as I can see on top of the preparation table where the women Elders did the chopping, cutting, dicing, marinading, Once they are done some of them moved over to the stove & start the Soute of onions & garlic in several pots going on… Not to mention the night before they did the preparation on marinading all the Ribs & Chicken. In the morning the Men Elders gather up outside to do the BBQ & Roasting the whole pig under ground…thats a lot of prep & when it was all done WOW! WHAT A DELICIOUSsss MEAL the Flavor was Awesome sooo good!!! Just think it was only salt, Black Pepper, soysauce & vinegar were used for flavor… Thanks for taking me back home with all the memories & your Page. WOW, Hafa Adai.
