Spam is a staple on Guam. In fact, Spam has been called the “poor man’s steak” by many, although a can of Spam is not cheap! I have a friend who lives in an area where Spam sells for about $5.00 per can! At that price, I’d rather buy real steak! 😀
Chamorros can be quite innovative when it comes to creating Spam dishes. An easy and classic dish is Spam Kelaguen. This is my sister’s version.
Give it a try; I think you’ll like it. 🙂
- 1 can Spam, cut into thin strips
- 4-6 stalks green onions, thinly sliced
- 1 cup freshly grated coconut
- Lemon juice, to taste
- Salt, to taste
- Hot pepper, to taste
1. Lightly pan-fry the spam (for only 1-2 minutes) then place in a bowl.
2. Add green onions, coconut, lemon juice, salt, and hot pepper. Mix, taste, and adjust seasonings and lemon juice, to taste.
3. Serve with titiyas or hot steamed white rice.
I love the Kelaguen I have tried in the past! This sounds interesting!
There doesn’t seem to be any coconuts on the shelf here. Could one substitute shredded coconut?
You can use dried, unsweetened coconut.
During the quarantine, I’m getting more than a little bored with the same old stuff. Getting ready to do an online grocery order and decided to get some Spam.

I don’t think that recipe has an actual name. I’ve heard some call it ‘spam goulash.’ We just call it spam with green beans and tomatoes.
I am planning a fiesta sytle meal using your recipes. Although I have made some of them for two this a crowd of 24. I am making the following items from your recipes. What can I prepare ahead of time then freeze or refrigerate for cooking or reheating?

You can make/prep several items on your menu ahead of time.
BBQ Chicken – marinate them in a freezer-safe ziplocked bag then freeze for up to a week. The day before the BBQ, defrost in the refrigerator then BBQ a few hours prior to eating.
Ribs in tomato sauce – cook in a slow cooker/crock pot overnight (or start the cooking in the morning) to save time.
Red rice – this is best made fresh
Shrimp patties – you can prepare the batter the night before; refrigerate then fry a few hours before the party
Lumpia – you can roll the lumpia and freeze in a freezer-safe bag. Fry the day of (no need to defrost)
Spam kelaguen – you can make this the day before and refrigerate; if you like it warm, you can heat it in the microwave for a couple of minutes, or bring it to room temperature before serving.
