    I am so glad I stumbled onto your site. I did a tour of duty on Guam while in the Coast Guard.’78-’80. I lived in Tumon Bay a block and a half from the beach. I loved the warm and friendly people. They always invited us in or pulled us into the fiestas my roomie and I came across riding our motorcycles around on the weekends. I loved the farmers market and all the food varieties offered. Heck my roomie married a Chamorro lady. I have missed those flavors for decades now. I have bookmarked your site for future cooking endeavors. Can’t wait to start with some of your more traditional recipes and go from there. Thank you so much for all your hard work on your site.         Hafa Adai once again Annie. I have tried cooking several of your recipes. Love them! I keep your site bookmarked so I can easily try a new recipe. Your site is truly awesome. So detailed and most delicious recipes. So one dish I loved and used to get often at the Farmers Market way back in ’78-’80 was a version of Pancit. But it seems they made it with yakisoba type noodles instead of the rice threads. Would your Pancit Bihon recipe work using the yakisoba noodles? I seem to prefer them over the other. Man I really wish I could take my wife and vacation there for two weeks to revisit so many of the places I remember. The Merizzo Water Festival was a blast!!! Also miss fresh Mahi sashimi with finadene on Tumon Beach. Would love to get some boonie pepper seeds to grow here in Vegas… I vividly remember my first encounter with those little suckers. WOW!

        • Hafa Adai! You really need to take a trip back to Guam; I’m sure you and your wife would greatly enjoy it! The island has changed quite a bit, but for the better. As for using yakisoba noodles, yes, my recipe would work with it as well. I also recommend trying it with yellow Chinese egg noodles. Cook the noodles as directed on the package, then add it to your meat and vegetables. If you like it a little more saucy, add some soy sauce and/or your broth of choice AND a packet of achote powder. So good! Let me know if you made a variation of it and how it turned out. 🙂

    • Hi Jo Ann, yes, I have a recipe, but I just have to upload it.

      As for an ingredient to spice it up, I like to use a bit of powdered chicken seasoning to give the broth a more concentrated chicken flavor. If you like it pika/hot, add a teaspoon of chopped peppers too. I also toast my rice then grind it in a blender, rather than using cream of rice. It tastes so much better this way, in my opinion.
